The owners of Valley Shepherd Creamery in Long Valley, Eran and Debra Wajswol, didn't plan on being cheese artisans -- they were both engineering majors in college. But their travels throughout Europe gave them a great appreciation for traditional cheeses. They learned their craft from dairies in Spain, France, Italy, The Netherlands and Belgium - and brought that knowledge back to New Jersey.
